Extraction (Trituration)

Steps
• Grinding : the whole fruit is crushed with its nucleus
• Kneading : the dough is homogenized
• Solid/liquid separation : centrifugation cold
• Separation of oil/water : by settling or centrifuge

Process
Cold Extraction guaranteeing an Extra Virgin oil of exceptional quality, without alteration of the aromas.

Tasting

Aspect
Shiny dress with reflections of light green on a deep level.

Nose
Aromas soft and elegant, dominated by the green apple, almond and hazelnut.

Mouth
Ardence and bitterness marked, beautiful persistence, great complexity.
Vegetal Notes and fruity. Perfect dishes of character.

Storage : 2 to 3 years. Store between 8 and 15°C, protected from light.
