Maceration for 3 to 4 weeks, and then extract gentle and precise, a matter which is perfectly ripe.
Breeding 18 months in foudres 50hL and barrels 500L.

Cheeses
Nose
Intense red and black fruits (blackcurrant, raspberry). After aeration, notes of vanilla, chocolate and toasted to barrel ageing to reveal.
Mouth
Attack elegant and dense. Mouth-structured tannins melted. Aromas of black fruit jam, garrigue (thyme) and flavors roasted and chocolate on the length.
Wine in conversion to organic farming. It will be certified from the vintage 2020.
